I was really craving meatloaf today and my husband loves meatloaf as well. So I began my search for a low carb meatloaf recipe and found this one by Lyn at http://escapefromobesity.blogspot.com/.

Lyn's Favorite Meatloaf
Ingredients:
1 and 3/4 lb or 28 oz raw 93% lean ground beef (4 Leans)
1/4 cup egg beaters

1/4 cup egg beaters
1 cup low sugar tomato sauce, divided ~ I used Rao's marinara sauce (4 Greens)
1/2 cup reduced fat grated parmesan cheese (4 Condiments)
1/2 cup reduced fat grated parmesan cheese (4 Condiments)
2 tbsp lite soy sauce (2 Condiments)
1/2 tsp garlic powder (1 Condiment)
2 tsp onion powder (4 Condiments)
1 tbsp dried parsley (1 Condiment)
Dash of black pepper
Directions:
Preheat oven to 350 degrees.
Mix ground beef with egg beaters, 3/4 cup tomato sauce, grated parmesan cheese, soy sauce, garlic powder, onion powder, parsley, and black pepper.
Put the mixture in a casserole dish. Smooth the top a bit.
Bake uncovered for 1 hour.
Remove from oven and add 1/4 cup of tomato sauce on top.
Return to oven and bake an additional 10 minutes.
Take it out of the oven and carefully drain off the fat.
Let the meat rest for 10 minutes, then serve.
